Course 1: Pate de Foie et Oignons Chicken liver and rabbit pâté with crispy onion rings, mostarda, and onion jam.
Paired with G.H. Mumm Grand Cordon Brut (Champagne Region) A vibrant and crisp Champagne with bright citrus, tree fruit, and delicate fizz, perfectly complementing the richness of the pâté.
Course 2: Salade Lyonnaise Moderne Soft poached local organic egg, Villages Grown greens, bacon lardon, carrot purée, and a bacon vinaigrette.
Paired with Chateau de Jarnioux Beaujolais (Burgundy Region) A light, smooth, and elegant wine with notes of strawberry, cherry, and raspberry, balancing the smoky and savory elements of the salad.
Course 3: Frog Leg Croquette Crispy fried frog leg croquette on a velvety béchamel, topped with truffle caviar.
Paired with Chateauneuf-du-Pape Domaine Barville (Rhone Valley Region) A bold, dry red with black fruit, oak, and leather notes, cutting through the richness of the dish for a well-rounded contrast.
Course 4: Carbonnade de Oxtail Slow-braised oxtail with silky pomme purée and confit carrots.
Paired with Chateau Martinet, Saint-Émilion Grand Cru Classé (Bordeaux Region) A bold and structured wine with deep oak, vanilla, and tobacco flavors that enhance the depth of the braised oxtail.
Course 5: Mille-Feuille aux Fraises Delicate layers of puff pastry filled with luscious vanilla pastry cream and roasted strawberries.
Accompanied by Coffee Service. A classic finish to a luxurious meal, allowing the warm, comforting notes of coffee to pair beautifully with the sweet, flaky pastry.
